Ultimate Gin & Tonic Pancakes!

Yes, we have done it! We’ve formulated the ultimate gin and tonic inspired recipe for your Shrove Tuesday!

The Humble G&T Pancake!

Pancake Day is finally here and we have been working hard to formulate a recipe full of ginspiration, designed to add a gin twist to the favoured traditional pancake. The method is very simple and will have you serving G&T pancakes for everyone in no time at all! You can make them at home and you don’t need any super fancy crepe plates, just a suitable frying pan will do! Throw away the lemon! Throw away the Nutella! Because your Pancakes just got a serious upgrade!

 

Recipe:

Pancake Mixture

  • 200gram of Self Raising Flour
  • 200ml of Tonic Water (we used Franklin and Sons as it’s very fizzy and contains only natural flavours!)
  • 50ml of WhataHoot Signature Dry Gin
  • 50ml of Milk
  • 1 Egg

Sugar Syrup

  • 4 Tablespoons of Sugar
  • 4 Tablespoons of Gin
  • Juice of 2 Limes

To Make the Sugar Syrup

Combine the sugar, gin and lime juice into a saucepan.
Boil on a high heat for several minutes.

Take off the heat when the syrup has a thick consistency and set aside.

 

To Make the Pièce De Résistance

Combine the self-raising flour, tonic water, gin, milk and egg into a large mixing bowl. Whisk vigorously and set aside.

Heat butter or coconut oil in a large non-stick frying pan. Add 1-2 tablespoons of the pancake mixture to the pan. Cook for approximately 1-2 minutes on each side – they should be a nice golden brown colour.

Stack the pancakes onto a plate and drizzle the gin syrup over the top making sure that the luscious liquid oozes its way down the stack.

Garnish with some fruits! We loved Blueberries and Raspberries and of course a generous serving of WhataHoot!
